Melt butter in a large pot over medium heat until foamy.
Add chopped onion, celery, and carrots; sauté until softened, about 5-7 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add tomato paste and cook for another 2 minutes, stirring frequently.
Pour in white wine and scrape the bottom of the pot to deglaze, simmering until reduced by half, about 3-4 minutes.
Add fish stock, thyme, and bay leaf; bring to a boil.
Reduce heat and simmer for 15-20 minutes to develop flavors.
Add lobster meat and simmer for an additional 5-7 minutes.
Remove thyme and bay leaf; blend the soup until smooth using an immersion blender.
Stir in heavy cream and heat through without boiling.
Season with salt and black pepper to taste.
Garnish with chopped parsley before serving.
