1 lb (500gram) Boneless Chicken
2 tbsp Plain Yogurt
1 tsp of Kashmiri Chili Powder or Paprika
1 tsp Ginger Garlic paste
1 tsp Lemon juice
1/2 tsp Salt
4 tbsp Unsalted Butter
2 medium size Onion
3 medium size Tomato or 1 (15oz) can of diced/crushed tomatoes
2 cloves Garlic
1/2 inch Ginger
10 to 12 Whole Raw Cashew nuts
1/2 tsp of Chili powder or Cayenne pepper
1 tsp Salt
1/4 cup Water
1 tbsp Dried Fenugreek leaves or Fresh Cilantro
1/2 tsp Garam Masala
1 tsp Refined sugar
1/4 cup of Heavy whipping Cream or half and half or coconut milk

Marinate the chicken with yogurt, Kashmiri chili powder, ginger garlic paste, lemon juice, and salt for 15 to 30 minutes or overnight in the refrigerator.

In the Instant Pot, melt 2 tbsp of butter and sauté the chopped onions until translucent.

Add the chopped tomatoes, garlic, ginger, cashew nuts, chili powder, salt, and water. Stir to combine.

Add the marinated chicken to the pot and mix well.

Close the lid and cook on high pressure for 10 minutes.

Once done, allow for natural pressure release.

Stir in the remaining butter, dried fenugreek leaves, garam masala, sugar, and heavy cream. Mix until well combined.
