1/2 Cup Curd/Yogurt
1/2 tsp Salt
Lukewarm Water, As required to knead
2 tbsp Coriander seeds
1 tbsp Cumin
2 Potatoes, Boiled, Peeled & Grated/Mashed
1 tsp Ginger, grated
1 tsp Garlic, minced
2 Green Chilli, Finely Chopped
1-2 tbsp Chopped Coriander & Mint Leaves
1 tsp Kashmiri Red Chili Powder
1/2 tsp Garam Masala
1/2 tsp Dry Anar Dana/ Dry Pomegranate seeds Powder (optional)
1/2 tsp Chaat Masala
1/2 tsp Amchoor Powder (Dry Mango Powder)
1/2 tsp Black Salt
1/2 tsp Salt
Flour/Maida for Dusting
1-2 tbsp Chopped Coriander & Mint Leaves
1-2 tbsp Kalonji (Onion Seeds)
1 tbsp Roasted & Crushed Coriander & Cumin Seeds

Prepare the stuffing by mixing boiled, peeled, and grated/mashed potatoes with ginger, garlic, green chili, chopped coriander and mint leaves, Kashmiri red chili powder, garam masala, dry pomegranate seeds powder (if using), chaat masala, amchoor powder, black salt, and salt.

Divide the dough into equal portions and roll each portion into a circle.

Place a portion of the potato filling in the center of the rolled dough, fold it over, and seal it.

Roll out the stuffed dough gently to flatten it.

Dust with flour as needed while rolling.

Cook the kulcha on a hot tawa until golden brown on both sides, applying ghee/oil as needed.
