Its popularity has spread beyond India, with variations appearing in restaurants worldwide, often adapted to local tastes while retaining its core flavors.

In a mixing bowl, add 1 cup flour.
You can use whole wheat flour for a healthier version.
Add 3 tbsp card, 1 tbsp oil, 1 teaspoon sugar, 1/2 teaspoon salt, 1 teaspoon baking powder, and 1/4 teaspoon baking soda.
Mix everything well; adding card and baking soda gives that perfect softness without yeast.
Gradually add 1/4 cup water and knead it into a soft dough.
Rub a little oil on top of the dough and let it rest to make the kulcha soft and fluffy.
Prepare the potato stuffing by taking 2 boiled mashed potatoes.
Add 2 tbsp chopped onion, 2 chopped green chilies, 1/2 teaspoon chili flakes, 1/2 teaspoon chaat masala, 1/2 teaspoon cumin powder, 1/2 teaspoon salt, and 1 tbsp coriander leaves.
Mix everything until well combined.
Take a small portion of the dough and flatten it slightly.
Place the potato stuffing in the center, ensuring the stuffing is dry and well mashed to avoid tearing.
Cover and roll gently into an oval shape.
Sprinkle white sesame seeds, black sesame seeds, and chopped coriander leaves on top.
Heat a pan and add a few drops of water before placing the kulcha inside.
Cover and cook for 2-3 minutes on low to medium heat.
Brush with ghee and cook both sides until golden and cooked through.
