Add 5 cups of rolled oats to a mixing bowl.
Add 1/2 cup of coconut oil and 1/2 cup of honey to the oats.
Add 2 teaspoons of cinnamon, 1 teaspoon of salt, and 1 teaspoon of vanilla to the mixture.
Mix everything together until the oats are fully coated with the oil and honey and the cinnamon is evenly distributed.
Transfer the granola mixture onto a rimmed baking sheet lined with parchment paper.
Spread the mixture out evenly on the baking sheet, packing it down slightly.
Preheat the oven to 325 degrees Fahrenheit and bake the granola for 11 minutes.
After 11 minutes, take the granola out of the oven and stir it, then pack it down again.
Return the granola to the oven and bake for another 11 minutes, checking for a golden brown color.
If the granola is not golden brown after the second bake, continue baking in 2-minute increments until the desired color is achieved.
Once baked, let the granola cool completely on the baking sheet to allow it to harden.
Once cooled, crumble the granola into a bowl using your hands.
Add 2/3 cup of unsweetened shredded coconut, 1/3 cup of dried cranberries, and 1/3 cup of dried cherries to the bowl with the crumbled granola.
Mix the dried fruit and coconut into the granola until well combined.
