Remove the outer leaves of the red cabbage and green cabbage.
Wash the outside of the cabbages with a brush to remove dirt.
Cut the green cabbage and red cabbage in half, removing the hard core.
Use a mandolin to shred the green and red cabbage into thin slices.
Rinse the shredded cabbage in a salad spinner under cold water and place it in a bowl.
Shred the green and red bell peppers using the mandolin and add to the bowl.
Grate the carrots using a box grater and add to the bowl.
De-seed the Scotch bonnet pepper, chop it finely, and add it to the bowl.
Peel and slice half of a red onion using the mandolin and add it to the bowl.
Chop half a bunch of cilantro, discarding the stems, and add it to the bowl.
Add apple cider vinegar to the bowl and mix everything together with your hands.
Sprinkle salt to taste and mix again.
