Ingredients

  • 1 lb boneless, skinless chicken thighs

  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 whole wheat pitas
  • 1 cup cucumber, diced
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill, chopped
  • 1/2 tsp salt

Instructions

  1. 1In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper to create a marinade.
  2. 2Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. 3Preheat your grill or grill pan over medium-high heat.
  4. 4Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  5. 5Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
  6. 6While the chicken is resting, prepare the tzatziki sauce by combining diced cucumber, Greek yogurt, minced garlic, lemon juice, dill, and salt in a bowl. Mix well and set aside.
  7. 7Warm the whole wheat pitas on the grill for about 1 minute on each side until soft and pliable.
  8. 8To assemble, place a generous amount of sliced chicken in each pita, followed by a spoonful of tzatziki sauce.
  9. 9Serve immediately, garnished with additional cucumber or dill if desired.

  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cucumber, diced
  • 1/4 cup feta cheese, crumbled

  • 1 tsp dried oregano

Instructions

  1. 1Preheat the oven to 450°F (230°C).
  2. 2Roll out the pizza crust on a floured surface to your desired thickness.
  3. 3Transfer the rolled-out crust to a pizza stone or baking sheet.
  4. 4Spread a thin layer of olive oil over the crust.
  5. 5Bake the crust in the preheated oven for about 10-12 minutes or until golden brown.
  6. 6While the crust is baking, prepare the salad by combining chickpeas, cherry tomatoes, red onion, cucumber, and feta cheese in a large bowl.
  7. 7In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to create the dressing.
  8. 8Pour the dressing over the salad and toss to combine.
  9. 9Once the pizza crust is done, remove it from the oven and let it cool slightly.

  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/2 cup diced pickles
  • 1/4 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp white vinegar
  • 1 tsp garlic powder
  • 1 tsp onion powder

Instructions

  1. 1In a skillet over medium-high heat, season the ground beef with salt and pepper. Form into small patties and smash them down in the skillet to cook.
  2. 2Cook the patties for about 3-4 minutes on each side until browned and cooked through.
  3. 3In a bowl, mix together the mayonnaise, ketchup, mustard, white vinegar, garlic powder, and onion powder to create the Big Mac sauce.
  4. 4On a separate skillet, place one tortilla and sprinkle half of the cheddar cheese on one half of the tortilla.
  5. 5Add the cooked beef patties on top of the cheese, followed by diced onions and pickles.
  6. 6Drizzle some Big Mac sauce over the toppings and fold the tortilla in half.
  7. 7Cook the quesadilla for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  8. 8Remove from the skillet and let it cool for a minute before slicing into wedges.
  9. 9Repeat the process with the remaining tortillas and ingredients.
