- ●1 lb boneless, skinless chicken thighs
- ●2 tbsp olive oil
- ●2 tsp ground cumin
- ●2 tsp ground coriander
- ●1 tsp paprika
- ●1/2 tsp turmeric
- ●1/2 tsp cinnamon
- ●1/2 tsp salt
- ●1/4 tsp black pepper
- ●4 whole wheat pitas
- ●1 cup cucumber, diced
- ●1 cup plain Greek yogurt
- ●2 cloves garlic, minced
- ●1 tbsp lemon juice
- ●1 tbsp fresh dill, chopped
- ●1/2 tsp salt
Instructions
- 1In a bowl, combine olive oil, cumin, coriander, paprika, turmeric, cinnamon, salt, and black pepper to create a marinade.
- 2Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- 3Preheat your grill or grill pan over medium-high heat.
- 4Remove the chicken from the marinade and grill for about 5-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
- 5Once cooked, remove the chicken from the grill and let it rest for a few minutes before slicing it into thin strips.
- 6While the chicken is resting, prepare the tzatziki sauce by combining diced cucumber, Greek yogurt, minced garlic, lemon juice, dill, and salt in a bowl. Mix well and set aside.
- 7Warm the whole wheat pitas on the grill for about 1 minute on each side until soft and pliable.
- 8To assemble, place a generous amount of sliced chicken in each pita, followed by a spoonful of tzatziki sauce.
- 9Serve immediately, garnished with additional cucumber or dill if desired.

- ●1 cup cooked chickpeas
- ●1/2 cup cherry tomatoes, halved
- ●1/4 cup red onion, diced
- ●1/2 cucumber, diced
- ●1/4 cup feta cheese, crumbled
- ●2 tbsp olive oil
- ●1 tbsp lemon juice
- ●1 tsp dried oregano
- ●Salt and pepper to taste
Instructions
- 1Preheat the oven to 450°F (230°C).
- 2Roll out the pizza crust on a floured surface to your desired thickness.
- 3Transfer the rolled-out crust to a pizza stone or baking sheet.
- 4Spread a thin layer of olive oil over the crust.
- 5Bake the crust in the preheated oven for about 10-12 minutes or until golden brown.
- 6While the crust is baking, prepare the salad by combining chickpeas, cherry tomatoes, red onion, cucumber, and feta cheese in a large bowl.
- 7In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to create the dressing.
- 8Pour the dressing over the salad and toss to combine.
- 9Once the pizza crust is done, remove it from the oven and let it cool slightly.
- 10Top the baked pizza crust with the chickpea salad mixture and serve immediately.

- ●1 cup shredded cheddar cheese
- ●1/2 cup diced onions
- ●1/2 cup diced pickles
- ●1/4 cup mayonnaise
- ●2 tbsp ketchup
- ●1 tbsp yellow mustard
- ●1 tbsp white vinegar
- ●1 tsp garlic powder
- ●1 tsp onion powder
Instructions
- 1In a skillet over medium-high heat, season the ground beef with salt and pepper. Form into small patties and smash them down in the skillet to cook.
- 2Cook the patties for about 3-4 minutes on each side until browned and cooked through.
- 3In a bowl, mix together the mayonnaise, ketchup, mustard, white vinegar, garlic powder, and onion powder to create the Big Mac sauce.
- 4On a separate skillet, place one tortilla and sprinkle half of the cheddar cheese on one half of the tortilla.
- 5Add the cooked beef patties on top of the cheese, followed by diced onions and pickles.
- 6Drizzle some Big Mac sauce over the toppings and fold the tortilla in half.
- 7Cook the quesadilla for about 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
- 8Remove from the skillet and let it cool for a minute before slicing into wedges.
- 9Repeat the process with the remaining tortillas and ingredients.
