One Pot Chicken

Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and sauté until translucent, about 3-4 minutes.
Stir in minced garlic and cook until fragrant, about 1 minute.
Add diced bell pepper and carrots, cooking until softened, about 5 minutes.
Season chicken with salt, black pepper, and paprika; add to the pot, browning on all sides, about 5-7 minutes.
Pour in chicken broth and add thyme, bay leaves, and lemon juice.
Add diced potatoes and bring to a simmer.
Cover and cook on low heat for 30-40 minutes until chicken is cooked through and tender.
Stir in peas and cook for an additional 5 minutes.
Remove bay leaves and adjust seasoning as needed.
Garnish with chopped green onions before serving.
