Peel and core the apples, then slice them thinly.
Mix the sliced apples with raisins, sugar, cinnamon, lemon zest, and a squeeze of lemon juice.
Let the apple mixture rest.
Preheat the oven to 350°F (175°C).
Melt the unsalted butter.
Lay out one sheet of phyllo dough and brush it generously with melted butter.
Repeat this with the remaining sheets, stacking them on top of each other.
Spread the apple filling along the length of the stacked phyllo dough, leaving a 2-inch border around the edges.
Fold in the sides of the phyllo dough and roll the strudel up like a log.
Place the strudel on a lined baking tray.
Brush the strudel with the remaining melted butter.
Bake in the oven for about 45 minutes, or until the strudel is golden and crisp.
Slice and serve warm with a dusting of powdered sugar or a scoop of vanilla ice cream.
