2

Sift 3 cups of whole wheat flour into a mixing bowl.

3

Add 1 tablespoon of salt, adjusting to taste.

4

Crush 1 teaspoon of carom seeds and add to the flour for aroma.

5

Add a pinch of turmeric for color and mix well.

6

Incorporate 1 tablespoon of ghee into the flour mixture.

7

Gradually add water to form a dough, ensuring it is neither too soft nor too hard.

8

Divide the dough into small balls, ensuring they are not too thick or too thin.

9

Preheat the oven and prepare a baking tray.

10

Place the baatis in the oven and bake for 20 minutes, checking for doneness.

11

While the baatis are baking, prepare the dal by soaking 60 grams each of chana dal, urad dal, and 50 grams each of other lentils for half an hour.

12

After soaking, boil the lentils with 6 cups of water, adding 1/2 teaspoon of turmeric and 1 teaspoon of salt.

13

In a separate pan, heat oil and add 1 tablespoon of red chili powder, 1 tablespoon of coriander powder, and 1 teaspoon of garam masala.

14

Add chopped onions, green chilies, and tomatoes to the pan and cook until soft.

15

After 20 minutes, check the baatis and flip them to ensure even cooking.

16

Once the baatis are golden brown, remove them from the oven and let them cool slightly.

17

For churma, mix half the amount of jaggery and half the amount of sugar with the crumbled baatis.

18

Add ghee to the churma mixture and combine well, optionally adding dry fruits.

19

Prepare the churma into small balls or laddus.

20

Serve the dal with the baatis and churma on the side.
