Start with 4 sticks of unsalted room-temperature butter.

Gradually add 5 1/2 cups of all-purpose flour, starting with 2 cups and mixing well.

Continue adding flour until you bring in about 4 cups, then add an additional 1 and 1/2 cups by using your hands to work it into the dough.

Once the dough has a nice texture, let it sit in the fridge for 6 to 8 hours (or as long as it takes to make an espresso).

After chilling, separate the dough into 4 equal parts.

Roll out the dough and use a gadget to cut out circles from the dough.

Preheat the oven to 350°F (175°C) and bake the cookies for about 18 minutes.

After baking, let the cookies cool before applying a small amount of jam in between each cookie.
