Combine 1 kilo of all-purpose flour, 1 cup of fine semolina, 1 tablespoon of mahb, and 2 teaspoons of mahb in a mixing bowl; mix them all together by hand.

Add 2 cups of ghee and 2 cups of salted butter to the dry ingredients; mix by hand until combined.

Gradually add 2 cups of milk to the mixture, bit by bit, and mix until a dough forms.

Prepare a baking tray lined with baking paper.

Take a small piece of dough, flatten it, and place a date inside; fold the dough over to encase the date.

Use a mold to shape the cookies; press the dough into the mold and remove it to form the cookie shape.

Repeat the process until all dough is used and place the cookies on the prepared baking tray.

Preheat the oven to 200°C (392°F) for about 5 minutes before baking.

Bake the cookies in the preheated oven for 15-20 minutes, or until golden brown.
