Azerbaijan cuisine. “Buglama” - meat stew with vegetables

Heat olive oil in a large pot over medium heat until shimmering.

Add chopped onions and sauté until translucent, about 5-7 minutes.

Add minced garlic and cook until fragrant, about 1 minute.

Stir in diced beef and brown on all sides, about 8-10 minutes.

Add chopped carrots and bell peppers, cooking for an additional 5 minutes.

Incorporate diced tomatoes and stir well to combine.

Season with salt, black pepper, bay leaves, and thyme.

Pour in enough water to cover the meat and vegetables.

Bring to a boil, then reduce heat to low and cover.

Simmer for 1.5 to 2 hours, until beef is tender.

Add diced potatoes and cook for another 30 minutes.

Adjust seasoning if necessary, adding more salt or pepper to taste.

Remove bay leaves before serving.

Garnish with chopped parsley before serving.
