500 grams dried fruit

Tear half a sliced loaf of bread into little pieces and place in a big bowl.

Add about 500 grams of dried fruit (such as raisins, currants, chopped dates, cranberries, mango, and prunes) to the bowl.

Peel and core 2 apples, chop them into fine pieces, and mix them into the bowl with the bread and dried fruit.

Add the grated zest of 1 lemon to the mixture.

In a separate bowl, mix 150 grams of white sugar with 2 teaspoons of mixed spice (cinnamon, nutmeg, ginger, allspice).

In another bowl, beat together 500 ml of milk and 2 eggs, then pour this mixture over the bread and fruit.

Melt 100 grams of unsalted butter in the microwave and pour it over the mixture in the bowl.

Mix everything together with a large spoon until the bread starts to break apart and soften, or use your hands to combine the ingredients by hand.

Preheat the oven to 180°C.

Line a big tray with greaseproof paper and pour the mixture into the tray, flattening it down.

Bake in the oven for 1.5 hours until golden-brown.

Once out of the oven, sprinkle about 1 tablespoon of Demerara sugar over the top.

Allow to cool slightly before cutting into generous portions.
