Wash the beef tripe with lemon to remove the odor.

Rinse the tripe well and set aside.

Place the tripe in a pressure cooker with boiling water, adding green onions, a sprig of cilantro, three cloves of garlic, and a teaspoon of salt.

Cook in the pressure cooker for about 30 minutes.

Prepare rice by using 2 cups of rice and 4 cups of water; blend 1 cup of water with garlic and onion for flavor.

Add the blended mixture to the pot with the remaining water, salt, and a bit of oil, then bring to a boil and cover to cook.

Cut the potatoes into small cubes and cook separately with a teaspoon of salt.

Toast the peanuts in a pan, stirring constantly until the shells start to come off, then let them cool and peel.

Check the rice and stir; let it dry a bit more if needed.
