Place cold water in the pressure cooker.

Add the cleaned beef tripe, cilantro stems, parsley, white onion, bay leaves, and garlic to the pressure cooker.

Add 1/4 tsp cumin and 1 tsp salt; cover and cook for about 1 hour.

Cut 1 lb of potatoes into cubes and cook with some garlic, white onion, and a little salt.

Once the tripe is cooked, strain the broth and reserve it.

Cut the tripe into pieces and set aside.

Peel and grate 1 medium tomato.

In a heated skillet, add a little oil and 1 medium white onion; season with salt and pepper.

Sauté until translucent, then add 2 cloves of garlic and mix well.

Add a little achiote to taste and 1 medium red bell pepper; mix well.

Add the grated tomato and sauté for about 3 minutes over medium heat.

Remove a third of the sauté mixture to blend with 2 tablespoons of peanut paste and 1 cup of milk.

Return the blended mixture to the skillet and add some of the reserved broth, adjusting for consistency.

Add oregano and finely chopped basil; cook for about 3 minutes to combine flavors.
