Start by cleaning the beef tripe thoroughly under cold water.

Cut the tripe into bite-sized pieces and set aside.

In a pressure cooker, add the tripe, a quartered onion, half a clove of garlic, fresh oregano, and strips of red bell pepper.

Add enough water to cover the tripe, but do not exceed three-quarters of the pot.

Add 1.5 tablespoons of salt and cover the pot.

Cook at high pressure for 45 minutes, reducing the heat slightly once pressure is reached.

After 45 minutes, turn off the heat and let the tripe cool in the pot.

Once cooled, remove the tripe and reserve the cooking liquid.

Chop the cooked tripe into irregular strips or pieces as preferred.

In a pan, heat some vegetable oil and add the chopped onion.

Sauté the onion until soft and translucent, about 5-7 minutes.
