Peel the yuca by cutting into the skin and removing it without peeling it like potatoes.
Wash the yuca thoroughly, ensuring each piece is clean.
Cut the yuca into smaller pieces for quicker cooking, about 4 pieces if large.
Boil water in a pot and add salt to it, not too salty.
Prepare a charcoal grill using conchitas (shells) for cooking.
Light the charcoal and cover it with more charcoal to heat.
Check if the yuca is cooked by testing its softness, then remove it from the heat to cool.
Grate the queso cuartito cheese.
Mash the cooled yuca using a masher or similar tool.
Add melted butter and grated cheese to the mashed yuca and mix well.
Prepare sticks for shaping the yuca mixture.
Shape the yuca mixture onto the sticks and place them on the grill.
While grilling, prepare coffee using Irupana coffee.
Grill the yuca sticks until they are nicely toasted, turning them occasionally.
Serve the sonso de yuca hot and enjoy with coffee.
