Heat 1/4 cup olive oil in a pan over medium heat.
Add 1/2 cup chopped red onion to the pan and cook until medium brown, using smell to gauge doneness.
Stir in 1 tablespoon of ginger and cook briefly.
Add 1 teaspoon of turmeric and 1/2 teaspoon of salt to the mixture.
Rinse 1 cup of dry red lentils and add to the pan.
Pour in 3 cups of water and cover the pan, allowing it to cook for about 10 minutes.
After 10 minutes, check the lentils and cook for an additional 5 minutes if needed.
Optionally, add chopped jalapeno peppers for heat.
Finish by adding 1 teaspoon of cardamom, either whole or ground, and turn off the heat.
