Boil water in a saucepan over medium heat.
Dissolve sugar in the boiling water until fully melted.
Remove from heat and sprinkle gelatin over the mixture, stirring until dissolved.
Add rose water and lemon juice, mixing well to combine.
In a separate bowl, mix cornstarch with a little water to create a slurry.
Add the cornstarch slurry to the gelatin mixture, stirring continuously.
Return the mixture to low heat and cook for a few minutes until slightly thickened.
Remove from heat and add food coloring, adjusting to desired color.
Pour the mixture into a mold and let it cool at room temperature.
Refrigerate for several hours until set completely.
Once set, unmold the jelly onto a serving plate.
Garnish with chopped nuts before serving.
