Ingredients

  • 2 cups dragon fruit puree
  • 1 cup water
  • 1/2 cup sugar
  • 2 tablespoons agar-agar powder
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice

Instructions

  1. 1In a saucepan, combine the water and sugar over medium heat, stirring until the sugar dissolves completely.
  2. 2Add the agar-agar powder to the saucepan and bring the mixture to a boil, stirring constantly.
  3. 3Once boiling, reduce the heat and let it simmer for about 2 minutes to activate the agar-agar.
  4. 4Remove the saucepan from heat and stir in the dragon fruit puree, salt, and lemon juice until well combined.
  5. 5Pour the mixture into a mold or individual serving cups.
  6. 6Let the jelly cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
  7. 7Once set, carefully remove the jelly from the mold or cups.
  8. 8Serve chilled, optionally garnished with fresh dragon fruit slices or mint leaves.

  • 1/4 cup shredded coconut (optional)

Instructions

  1. 1Preheat the oven to 350°F (175°C).
  2. 2In a large mixing bowl, combine the grated palm heart, flour, sugar, baking powder, and salt.
  3. 3In another bowl, mix the melted butter, coconut milk, and vanilla extract until well combined.
  4. 4Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the shredded coconut.
  5. 5Grease a cake pan or line it with parchment paper.
  6. 6Pour the batter into the prepared pan and smooth the top with a spatula.
  7. 7Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. 8Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  9. 9Slice and serve as a dessert or snack.
