- ●2 cups dragon fruit puree
- ●1 cup water
- ●1/2 cup sugar
- ●2 tablespoons agar-agar powder
- ●1/4 teaspoon salt
- ●1 teaspoon lemon juice
Instructions
- 1In a saucepan, combine the water and sugar over medium heat, stirring until the sugar dissolves completely.
- 2Add the agar-agar powder to the saucepan and bring the mixture to a boil, stirring constantly.
- 3Once boiling, reduce the heat and let it simmer for about 2 minutes to activate the agar-agar.
- 4Remove the saucepan from heat and stir in the dragon fruit puree, salt, and lemon juice until well combined.
- 5Pour the mixture into a mold or individual serving cups.
- 6Let the jelly cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours until set.
- 7Once set, carefully remove the jelly from the mold or cups.
- 8Serve chilled, optionally garnished with fresh dragon fruit slices or mint leaves.

- ●1 cup all-purpose flour
- ●1/2 cup sugar
- ●1/2 cup coconut milk
- ●1/4 cup unsalted butter, melted
- ●1 tsp baking powder
- ●1/2 tsp salt
- ●1/2 tsp vanilla extract
- ●1/4 cup shredded coconut (optional)
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a large mixing bowl, combine the grated palm heart, flour, sugar, baking powder, and salt.
- 3In another bowl, mix the melted butter, coconut milk, and vanilla extract until well combined.
- 4Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the shredded coconut.
- 5Grease a cake pan or line it with parchment paper.
- 6Pour the batter into the prepared pan and smooth the top with a spatula.
- 7Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- 8Remove from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- 9Slice and serve as a dessert or snack.
