4 cups water
2 tablespoons pure sesame oil
1 teaspoon red pepper flakes

Cut the ahi fish into one inch by one inch cubes.

Put the cubed ahi on a plate.

Liberally apply Hawaiian salt to the fish cubes.

Place the salted fish in the refrigerator for one hour.

After one hour, soak the fish in water for 5 to 10 minutes (7 minutes used).

Pour out the water from the soaked fish.

Place the fish in a dehydrator set to 155 degrees Fahrenheit.

Check the fish after two hours for moisture.

If moisture is still present, continue dehydrating for another half hour to an hour.

Once done, remove the fish from the dehydrator (note: cooking spray should be used to prevent sticking).

Drizzle pure sesame oil over the dried fish.

Let the fish cool or chill in the refrigerator before serving.
