Squeeze the juice from 1 lemon and set it aside.

Measure 200 grams of butter and add it to a mixing bowl.

Add 5 tablespoons of powdered sugar to the butter and mix until well combined.

Add 1 whole egg and 1 egg yolk to the mixture and mix again.

Incorporate 20 grams of vanilla sugar and the lemon juice into the mixture and mix briefly.

Gradually add 600 grams of all-purpose flour to the mixture, mixing with a spatula until combined.

If using, add 100 grams of walnuts to the dough.

Flour a wooden board lightly and roll out the dough to about 0.5 to 1 cm thickness.

Preheat the oven to 180 degrees Celsius (350°F).

Cut out cookies using various molds and place them on a baking sheet lined with parchment paper.

Bake the cookies for about 10 minutes, just until they dry without getting color.
