Palak (spinach) - 1 bunch
Dahi (yogurt) - 1 cup
Onion - 2 big size
Garlic - 25 cloves
Ginger - 1 inch
Red chilli - 5
Heeng (asafoetida) - 1 pinch
Cumin - 1 tsp
Coriander powder - 2 tsp
Turmeric powder - 1/4 tsp
Salt - to taste
Red chilli powder - 1 tsp
Kashmiri red chilli powder - 1/2 tsp

Wash the spinach (palak) and chop it finely.

In a pan, heat some oil and add cumin seeds.

Add chopped onions and sauté until golden brown.

Add minced garlic and ginger, and sauté for a minute.

Add chopped spinach and cook until wilted.

Add red chillies, heeng, coriander powder, turmeric powder, and salt. Mix well.

Stir in the yogurt (dahi) and cook for a few minutes until heated through.

Adjust seasoning and serve hot.
