Dahi Palak

4 cups palak (spinach)
2 medium tamatar (tomatoes)
1 medium onion
4 cloves garlic
2 green chilli
1 inch ginger
2 tablespoons wheat flour
1 cup curd (yogurt)
1 tablespoon Basic masale
1 teaspoon haldi powder (turmeric)
1 tablespoon dhaniya powder (coriander)
1 tablespoon kasuri methi (dried fenugreek leaves)
1 teaspoon red chilli flakes
1 teaspoon kashmiri lal mirch (Kashmiri red chili powder)
1/4 teaspoon hing (asafoetida)
1 teaspoon sonf powder (fennel powder)

Wash and chop the palak (spinach).

Blanch the palak in boiling water for a few minutes, then blend it into a smooth paste.

In a pan, heat some oil and add chopped onion, garlic, ginger, and green chilli. Sauté until golden brown.

Add chopped tamatar (tomato) and cook until soft.

Stir in the palak paste and mix well.

Add wheat flour to thicken the mixture, stirring continuously.

Season with Basic masale, haldi powder, dhaniya powder, kasuri methi, red chilli flakes, kashmiri lal mirch, hing, and sonf power.

Finally, mix in the curd (yogurt) and cook for a few more minutes.
