Whip heavy whipping cream in a mixing bowl until soft peaks form.
Add 1 cup of sugar and vanilla extract to the whipped cream and mix until combined.
Soak unflavored gelatin in cold water for a few minutes until softened.
Heat the soaked gelatin in a small saucepan over low heat until dissolved.
Stir in almond extract and mix well.
Gradually fold the gelatin mixture into the whipped cream until fully incorporated.
Spoon the mixture into serving dishes or glasses.
Chill in the refrigerator for at least 2 hours until set.
Garnish with crushed red raspberries before serving.
