1

Preheat the oven to 350 degrees Fahrenheit.

2

Prepare an 8.5 x 12 inch baking dish (or a 9 x 13 inch dish).

3

In a bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, 1/4 teaspoon of salt, and 2/3 cup of unsweetened cocoa powder. Sift the cocoa powder into the mixture to avoid lumps.

4

Whisk the dry ingredients together until evenly mixed.

5

In a stand mixer, add 3 large room temperature eggs and 1 and 2/3 cups of granulated sugar. Beat at high speed for about 2 minutes until pale and fluffy.

6

Add 1 and 1/2 teaspoons of pure vanilla extract and 1 cup of mayonnaise to the egg mixture. Blend until combined.

7

Gradually add the dry ingredients to the wet mixture, alternating with 1 and 1/3 cups of water. Start with a third of the dry mixture, then half of the water, another third of the dry mixture, the remaining water, and finally the last of the dry mixture. Mix until just combined.

8

Pour the batter into the prepared baking dish and bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Note that the creator baked for 45 minutes due to using a smaller pan.

9

Let the cake cool for a moment before making the frosting.

10

In a stand mixer, beat 1 cup of softened butter until pale and fluffy.

11

Add 4 and 1/2 cups of sifted confectioners sugar and 2 teaspoons of pure vanilla extract. Mix at low speed to avoid a sugar cloud.

12

Add 3/4 cup of unsweetened cocoa powder and mix at low speed until combined.

13

Add 1 to 2 tablespoons of half and half (or milk) to achieve desired frosting consistency, adjusting as necessary.

14

Once the cake has cooled for about 30 minutes, frost the cake with the chocolate buttercream frosting.
