Cook ramen noodles according to package instructions and set aside.

In a bowl, combine the bagged coleslaw mix, diced cucumbers, sliced bell peppers, grated carrot, and sliced scallions.

Add diced rotisserie chicken breast to the bowl.

Toss the salad ingredients together thoroughly.

In a separate bowl, mix the flavor packet from the ramen, oil, vinegar, and sugar to create the dressing.

Drizzle the dressing over the salad, using just enough to season and flavor it to your liking.

Add crushed ramen noodles, sunflower seeds, and crushed peanuts on top of the salad.

Garnish with fresh cilantro before serving.

If making ahead, do not add the dressing or crunchy toppings until just before serving.
