Tosca Cake hails from Sweden, named after the opera 'Tosca' by Puccini. This delightful cake is often enjoyed during coffee breaks, a cherished tradition in Swedish culture known as 'fika'. Today, it remains a popular treat, celebrated for its rich flavors and crunchy almond topping, enjoyed both in homes and cafes across Sweden.
Preheat the oven to 350°F (175°C) and grease a round cake pan.
Melt butter in a saucepan over low heat and let it cool slightly.
In a bowl, whisk together sugar and eggs until light and fluffy.
Add melted butter and mix until well combined.
Sift in flour and baking powder, then fold gently into the batter.
Stir in milk and vanilla extract until smooth.
Pour the batter into the prepared cake pan and spread evenly.
Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
While the cake bakes, prepare the topping by melting butter in a saucepan.
Add sugar, sliced almonds, and heavy cream to the melted butter, stirring until combined.
Remove the cake from the oven and spread the almond mixture evenly on top.
Return the cake to the oven and bake for an additional 10-15 minutes until the topping is golden brown.
Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Once cooled, dust with powdered sugar before serving.
