Sushi Burrito Teriyaki Salmon

Quinoa is healthier but more expensive; white rice is a budget-friendly alternative.
Make oven-baked cauliflower rice and let it cool.
Put cooled cauliflower rice into a mixing bowl.
Drizzle seasoned rice vinegar on top and toss well to season the cauli rice.
Add mayonnaise to the cauli rice and toss again to combine.
Sprinkle roasted sesame seed oil on top and toss again without compressing the cauli rice.
Set the bowl aside to marinate.
Pat the salmon fillet dry and apply half of the teriyaki glaze on the skin side.
Place the salmon skin side down on parchment paper and apply the remaining teriyaki glaze on the non-skin side.
Bake the salmon in a preheated oven at 400 degrees Fahrenheit for 10 to 15 minutes until done, depending on thickness.
Remove from the oven and let the salmon cool completely before cutting into 2 equal lengths.
Julienne the raw carrots and prepare the cucumber and red bell pepper into thin strips.
Place two sheets of nori slightly overlapping, end-to-end, and wet the edge of the underneath nori to bond them together.
Spread the prepared cauli rice at one end of the nori, covering about two-thirds of the length.
Sprinkle black sesame seeds on top of the cauli rice.
Place iceberg lettuce leaves near the edge of the cauli rice, followed by red bell peppers, cucumber spears, and carrot sticks.
Lay one half of the salmon fillet on one end of the nori, and the other half at the other end, touching in the middle.
Using a bamboo sushi mat, roll the sushi burrito tightly, tucking the contents as you go.
Wrap the sushi burrito in parchment paper and cut it on a diagonal for serving.
For a second version, use canned wild Pacific salmon, drain and flake it, and mix with teriyaki glaze.
Follow the same steps to assemble the sushi burrito using the canned salmon.
