Cover and cook for 1-1.5 hours until beef is tender, stirring occasionally.
Add chopped cabbage and carrots to the pot, stirring to combine.
Simmer for an additional 15-20 minutes until vegetables are tender.
Adjust seasoning to taste before serving.
