Cultural Context
Originating from the diverse culinary traditions of Turkey, Turkish bread is a staple in many households. It is often enjoyed with meals or used to scoop up dips and stews, reflecting the communal aspect of Turkish dining. Today, variations of this bread can be found in many countries, showcasing its global appeal.
Mix 400 grams of all-purpose flour, 7 grams of dry yeast, and 12 grams of sugar in a bowl.
Add 7 grams of salt and mix gently.
With a bread mixer running on low speed, slowly add in 80 grams of greek yogurt.
Then slowly add in 260 ml of water and increase the speed to medium.
Add 20 grams of unsalted butter at room temperature and let the machine run for 10 minutes.
Take the dough out and fold it from one side to another three to four times.
Cover the dough with a plastic sheet and let it rise for 1 to 1.5 hours in a turned off oven with the lights on.
Flour your work surface generously and gently roll the dough to form a ball.
Lay the dough on an oven tray covered with greased parchment paper and gently stretch it to the sides by pushing from the middle.
Cover the tray and let it rest for 20 to 30 minutes.
Wet your hands and form parallel vertical lines on the dough by gently pressing down.
Repeat the same process but at a 40 degrees angle to create diagonal lines.
Brush the bread with an egg wash made of 1 whole egg and 1 tablespoon of whole milk.
Sprinkle black and white sesame seeds on top.
Bake at 190 degrees Celsius (375 degrees Fahrenheit) for 20 minutes.
Once out of the oven, cover the bread with a dry towel for 15 minutes to keep it soft.
