Smoked Salmon Cheese Dip

Canned salmon is more affordable and still flavorful
Heat a medium-sized sauté pan over medium heat and add a little olive oil.
Add 1/2 red bell pepper (diced), 1 small onion (diced), and 2 minced garlic cloves to the pan.
Sauté the ingredients for about 5 to 7 minutes until the bell peppers and onions are tender, avoiding browning the garlic.
Peel the skin off 5 oz of hot smoked salmon and dice it into smaller bits.
Transfer the diced salmon into a large bowl.
Add 8 oz of softened cream cheese to the bowl with the salmon.
Add 1 cup of grated Parmesan cheese and 1 cup of grated smoked cheddar cheese to the bowl.
Add 1/3 cup of thawed and chopped frozen spinach to the bowl.
Add the sautéed bell pepper, onion, and garlic mixture to the bowl.
Stir in 1 tablespoon of Worcestershire sauce and 1 tablespoon of Dijon mustard.
Add seasoning: 1/2 teaspoon of salt, 1/2 teaspoon of ground black pepper, 1/2 teaspoon of dried basil, 1/2 teaspoon of dried thyme, and 1/2 teaspoon of smoked paprika.
Mix all the ingredients together until well combined.
Transfer the dip mixture into a ceramic baking dish, spreading it evenly to the edges.
In a separate bowl, combine 1/2 cup of panko breadcrumbs, 1/4 teaspoon of garlic powder, 1 tablespoon of freshly chopped parsley, and 2 tablespoons of melted butter. Mix to coat the breadcrumbs.
Sprinkle the breadcrumb mixture evenly over the top of the dip.
Preheat the oven to 375°F and bake the dip for 20 to 25 minutes until the sides are bubbling and the top is golden brown.
Remove the dip from the oven and let it cool for about 15 minutes before serving.
Serve the dip with a wide cheese knife or spatula on toasted baguette or crackers.
