1/2 teaspoon cumin powder

Wash and cut 500 grams of broad beans and set aside.

Wash and cut 1 medium-sized potato and set aside.

Peel and cut 1 brinjal and set aside.

Soak chickpeas (optional) and set aside.

Soak lentils (optional) and set aside.

Heat 2 teaspoons of refined oil in a pan.

Add the broad beans to the hot oil.

Add salt and turmeric powder, and fry for 3-4 minutes.

Add the soaked chickpeas and potato to the pan and fry everything on medium flame.

Transfer the fried broad beans and potato to a plate.

In the same pan, add more refined oil and heat it.

Once hot, add the soaked lentils and fry, then transfer to a plate.

Add 1 tablespoon of mustard oil to the same pan and heat it.

Add 1/2 teaspoon of panch phoran and fry for about 1 minute on medium to low flame.

Add the sliced onion and fry until golden brown.

Add 1/2 teaspoon of garlic paste and fry until fragrant.

Add the previously fried broad beans and potato to the pan and stir-fry for 1-2 minutes.

Add salt, 1 teaspoon of turmeric powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of coriander powder, and 1/2 teaspoon of cumin powder, and mix well.

Cook on low flame for 5-6 minutes, mixing occasionally.

Add some warm water and mix, then cover and cook on high flame until boiling.

Once boiling, add the cut brinjal and cover again, cooking on medium to low flame for 3-4 minutes.

After 3-4 minutes, uncover and mix to check if the potato and broad beans are cooked.

Adjust salt if needed, and add optional cumin powder, mixing well.

Let it dry without the lid for a bit, then add the fried lentils back into the pan.

Cover and cook for another 2-3 minutes.

Turn off the gas and transfer to a serving plate or bowl.

Serve hot with your favorite dish.
