1 teaspoon cumin seeds
1/4 teaspoon asafoetida
50 grams onions chopped
1 tablespoon ginger garlic paste
50 grams tomatoes chopped
1 teaspoon red chili powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 teaspoon turmeric powder
1 teaspoon garam masala powder
1 tablespoon fresh coriander chopped
1 inch ginger strips

Prick potatoes all over with the help of a knife or fork. Place the potatoes in saltwater for 15 minutes so that the potatoes soak in some salt for a better taste.

Heat oil in a Kadai / cooking pan and deep-fry the potatoes on medium heat till they are golden brown and completely cooked.

Remove with a skimmer and place on absorbent paper to drain the oil.

Heat oil in a pan. Add cumin seeds and asafoetida and cook on medium heat till the cumin seeds change color.

Add onion and sauté until onion turns light brown.

Add ginger-garlic paste and stir for about a minute.

Then add tomatoes and sauté until tomatoes are completely mashed.

Add red chili powder, cumin powder, coriander powder, turmeric powder, garam masala and stir until oil separates from the masala.

Finally, add fried potatoes and stir to mix well and add salt.

Add a little water & mix well. Cover & cook till the gravy thickens.

Remove from heat and serve hot garnish with coriander leaves and ginger strips.
