Start by cooking 2 cups of sweet onions with 1 cup of water over medium heat.
Once the onions start to reduce, add 3 teaspoons of garlic and ginger paste.
After 3 minutes, add 1/3 cup of oil and mix well.
Add 1/2 teaspoon of turmeric powder shortly after the oil.
Wash and cook 1 cup of yellow split peas by bringing 4 to 5 cups of water to a boil, then add the split peas and cook for 15 to 20 minutes.
Once cooked, add the split peas to the onion mixture.
Add 1 cup of warm water to the mixture and mix well, then cover the pot and let it simmer for 5 minutes.
After 5 minutes, add 1/2 cup of water to the mixture and let it simmer for another 5 minutes.
Optionally, add chopped or halved jalapenos to the dish.
Turn the heat down to low and let it simmer for 5 to 10 minutes or until the moisture is reduced.
