Cultural Context

Japanese cheesecake is a light and fluffy dessert that has gained popularity worldwide. It is known for its unique texture, which is achieved by folding whipped egg whites into the batter. 1

Place cream cheese, butter, and milk in a heatproof container and heat in the microwave at 600W for 1 minute and 50 seconds, mixing well until the cream cheese is completely melted. If not melted, heat for an additional 10 seconds.

2

Sift cake flour into the mixture from step 1 and mix well until smooth. If lumps form, strain the mixture.

3

Add egg yolks to the mixture from step 2 and mix well.

4

Add sugar to the egg whites all at once and whip at high speed with a hand mixer until soft peaks form. Then, mix at low speed for 1 minute to refine the texture.

5

Add 1/3 of the meringue to the mixture from step 3 and mix well, then gently fold in the remaining meringue. Mix until the batter is smooth and the traces disappear.

6

Pour the batter into a mold lined with parchment paper and bake in a preheated oven at 180℃ for 15 minutes, then reduce the temperature to 120℃ and bake for another 15 minutes, and finally reduce to 110℃ and bake for 55 minutes. The cake is done when a skewer inserted comes out without wet batter.

7

Remove from the mold and serve.
