Chop 250 grams of fresh salmon into big pieces and place them in the bowl of a food processor.

Add freshly squeezed lemon juice and Dijon mustard to the salmon in the food processor.

Process the mixture until it turns into a paste, scraping the sides and bottom of the bowl as needed.

Add the remaining 500 grams of salmon cut into big pieces and pulse until just combined, leaving some texture.

Transfer the salmon mixture into a large bowl.

Add Panko breadcrumbs, a couple tablespoons of shallots, fresh chopped dill, finely chopped capers, and hot sauce to the bowl.

Season with Old Bay seasoning, ground sea salt, and freshly ground mixed peppercorns.

Mix the ingredients until nicely combined.

Make a tiny patty from the mixture and cook it on medium-high heat to check the seasoning.

If needed, adjust the seasoning and redo the tasting step.

Form the mixture into 4 large patties and transfer them to a plate.

Cover the patties with plastic wrap and chill in the fridge for at least 2 hours, preferably 5 hours.

Bring the BBQ temperature between 450ºF to 500ºF and generously oil the grates with canola oil using tongs.

After the patties have reached room temperature, place them on the hot grates and close the lid.

Grill the patties for 4 minutes, then flip them and cook for another 4 minutes.

About 2 minutes before the patties are done, place the brioche buns on the top rack and optionally top the patties with a slice of cheese.

Spread homemade tartar sauce on the bottom buns, then place lettuce on top, followed by a salmon patty, a slice of tomato, onion rings, and more tartar sauce on the top buns.
