Cut the sprats into small pieces and place in a bowl, reserving the curing liquid.

Shell and chop the eggs and add to the sprats pieces along with the red onion, sour cream, crème fraîche, and herbs.

Mix thoroughly and season with white pepper to taste, but don't add any salt as the sprats will be quite salty already.

Add a little of the curing liquid if desired, but do so cautiously as it is quite strongly flavored.

Chill until required.
