1/2 red bell pepper, cubed
1/2 green bell pepper, cubed
3 garlic cloves, minced
1/2 eggplant, cubed
28 oz can of whole plum tomatoes
1 tsp paprika
1 tsp cayenne pepper
1 tsp cumin
3/4 tsp salt
3/4 tsp black pepper
6 oz crumbled feta cheese
4 eggs

Preheat oven to 375 F (190 C). Heat pan on medium low heat. Add olive oil.

Add onion and cook for 1 min. Add eggplant and cook for 5 mins.

Then add red and green bell peppers and cook for 20 mins.

Then add garlic, paprika, cayenne pepper, cumin. Mix well. Add can of tomatoes and squish them to mix with the rest of the ingredients.

Add salt and black pepper. Cook for 10 mins.

Add feta cheese. Mix well. Crack 4 eggs into the pan. Add a pinch of salt on the eggs.

Cook in oven for 8 - 12 mins. Garnish with cilantro and serve with bread!
