Make the bang bang sauce by mixing together 1/2 cup mayonnaise, 1/4 cup chili garlic sauce, 2 teaspoons sriracha, 1 tablespoon honey, 1 teaspoon fresh lemon juice, 1 teaspoon cayenne pepper, and salt and pepper to taste. Taste the sauce and adjust as necessary.

Soak 1 pound of peeled and deveined shrimp in about 1/2 cup buttermilk for a few minutes.

Prepare a seasoned cornstarch mixture by combining 3/4 cup cornstarch, 1 tablespoon cayenne pepper, and salt and pepper to taste. Mix well.

Tap off excess buttermilk from each shrimp and coat them in the cornstarch mixture. Set aside.

Heat vegetable oil in a pan to 375°F, about an inch deep. Test the oil by adding a pinch of the cornstarch mixture; it should sizzle when ready.

Fry the coated shrimp in batches for about 1 minute per side until golden brown and crispy. Do not overcrowd the pan.

Remove the fried shrimp and place them on a paper towel-lined plate to drain excess oil.

In a bowl, toss the fried shrimp with the prepared bang bang sauce until well coated. Reserve some sauce for dipping if desired.
