Lentil and Sweet Potato Dish

1 medium sweet potato

1/2 tsp Korean chilli flakes
1/2 tsp Italian herbs

1/4 tsp turmeric powder
1/2 tsp garlic powder
1 tsp baking powder
olive oil

Rinse 200g yellow lentils in cold water.

Soak lentils in cold water for 3 hours.

Peel and julienne or grate 1 medium sweet potato.

Add olive oil to a pan and heat it.

Add grated sweet potato to the pan.

Chop 3-4 green onions and add them to the pan.

Mince 2 garlic cloves and add them to the pan.

Season with 1/2 tsp Korean chilli flakes, 1/2 tsp Italian herbs, and a pinch of salt; mix well and cook for 2-3 minutes.

Place cooked sweet potatoes into a large mixing bowl.

Rinse soaked lentils with water and drain them.

Place lentils into a blender bowl.

Season lentils with 1/2 tsp garlic powder, 1/4 tsp turmeric powder, and salt.

Add 8oz dairy-free milk to the blender and blend until smooth.

Add 1 tsp baking powder to the blended mixture and blend again.

Combine lentils mixture with grated sweet potatoes and mix well.

Pour the lentils mixture into a lightly oiled skillet.

Cover with a lid and cook over medium heat for 5-7 minutes.

Flip the mixture over and cook for another 5-7 minutes or until golden brown.
