Preheat oven to 400°F (200°C).
Season cod fillets with salt and black pepper and set aside.
In a bowl, combine mayonnaise and a sploosh of Dijon mustard.
Add chopped Famous Dave's pickles to the mayonnaise mixture.
Add half of the fresh chopped dill to the tartar sauce mixture and reserve the rest.
Add a bit of salt, pepper, and some pickling solution to the tartar sauce and mix well.
Taste the tartar sauce to adjust seasoning as desired.
Melt butter in a pan and add panko bread crumbs, stirring to coat the breadcrumbs in butter.
Mix the remaining fresh dill, salt, pepper, and a dash of paprika into the buttered panko.
Prepare a baking pan by spraying it lightly with oil and spreading chopped onions on the bottom.
Lay the cod fillets on top of the onions and spray a little oil over the exposed onions.
Spread a thick layer of tartar sauce over the cod fillets.
Cover the fish with the buttered panko mixture, pressing it down into the sauce.
Place the baking pan in the oven and bake until the breadcrumbs are nice and toasty and the fish is cooked through.
Let the dish cool for a moment before serving.
