1

Wash and devein the shrimp, leaving the tails on if desired.

2

Add 2 teaspoons of olive oil to the shrimp and mix.

3

Combine the cayenne pepper, garlic powder, Old Bay seasoning, Cajun seasoning, all-purpose seasoning, onion powder, smoked paprika, black pepper, and lemon pepper seasoning in a bowl.

4

Reserve some of the seasoning mixture for the flour mixture and add the rest to the shrimp, mixing well.

5

Add the hot pepper sauce, mayonnaise, mustard, and eggs to a bowl, along with 1/2 teaspoon of salt and 2 teaspoons of the reserved seasoning mixture. Mix until combined.

6

Pour the mixture over the shrimp and coat well. Let it marinate for at least 30 minutes or fry immediately.

7

In another bowl, mix the remaining seasoning with the flour.

8

Heat enough peanut oil in a deep skillet to allow the shrimp to be deep-fried.

9

Dip each shrimp into the flour mixture, shaking off excess flour. Optionally, dip back into the wet mixture and then back into the flour for extra coating.

10

Fry the shrimp in batches for about 6 minutes, flipping occasionally until golden brown and crispy.

11

Remove the shrimp from the oil and place them on a cooling rack.

12

Repeat the frying process with any remaining shrimp.

13

Serve the fried shrimp with hot sauce and lemon for presentation.
