Prepare a spice powder by roughly pounding 1 tbsp of pepper corns and 1 tsp of cumin seeds in a mortar and pestle.
In a pan, add 2 tbsp of oil and 2 tbsp of ghee.
Add 1 tsp of Chan Dal, 1 tsp of urad dal, 1 tsp of mustard seeds, and a few cashews to the pan and roast until browned.
Add 1/4 tsp of Hing and thinly sliced garlic cloves, followed by 1 finely chopped large onion and 4 slit green chilies, sautéing on low flame.
Add fresh curry leaves and 1 tsp of salt, mixing well.
Add the prepared pepper and cumin powder, mixing again.
Transfer cooked rice to the pan and mix well with the onion base.
Adjust seasoning with additional salt if needed and add 1 more tsp of pepper and cumin powder to maintain flavor.
Serve the pepper rice hot.
