Chop 1 medium cauliflower into small florets, soak in hot water for 3 minutes, strain, and set aside.

In a bowl, combine the cauliflower florets with salt, turmeric powder, and chili powder; mix well and let rest for 5 minutes.

In a pan, heat 4 tablespoons of oil, add the marinated cauliflower pieces, and roast on high flame for about 5 minutes. Transfer to a bowl and set aside.

In the same pan, add 1 tablespoon of oil and the whole spices: 1 piece of cinnamon, 2 cardamom pods, 4-5 cloves, 1 teaspoon fennel seeds, and 1 bay leaf; roast briefly.

Add 2 chopped onions, 6 cloves of garlic, and 1 piece of chopped ginger; sauté until the onions are half cooked.

Add 15 cashews and mix well to incorporate.

Add 1 roughly chopped tomato and cook until it turns mushy; then turn off the stove and transfer to a bowl to cool completely.

Once cooled, transfer the mixture to a mixer jar, add a little water, and grind to a smooth consistency.

Transfer the ground masala to a bowl and set aside.

In a wide pan, add 2 tablespoons of oil and heat it; add 1 teaspoon of cumin seeds and roast.

Add the ground masala paste to the pan and cook on low flame for 2-3 minutes.

Add ½ teaspoon turmeric powder, 2 tablespoons Kashmiri red chili powder, 1 tablespoon cumin powder, 1 tablespoon coriander powder, 1 tablespoon garam masala powder, and 1 teaspoon salt; mix well.

Add 1 cup of water and mix again.

Add the roasted cauliflower florets and mix everything well.

Add ½ cup of water to adjust the gravy consistency, cover, and cook for about 10 minutes on medium-low flame.

After 10 minutes, open the lid to check the cauliflower gravy; it should look beautifully cooked.

Garnish with crushed kasuri methi and chopped coriander leaves; mix well before serving.
