Beef Stroganoff is a classic Russian dish that dates back to the 19th century. It is believed to have been named after the Stroganov family, wealthy merchants in Russia. The dish has evolved over the years and is now popular in many countries, often featuring variations in ingredients and preparation methods. Traditionally, it consists of sautéed beef in a creamy sauce, served over noodles or rice, making it a comforting meal.

Cut the rump steak into thin strips, trimming off any undesirable bits and fat.
Brown the steak in batches in a pan with a knob of butter and a drop of oil to prevent burning.
Remove the browned beef from the pan and set aside, keeping the caramelized juices in the pan.
Add the button mushrooms to the pan with some butter and cook until they have color.
Add more butter and oil, then add the shallots to the pan and gently soften them.
In a separate pot, boil water for the pasta, using 1 liter of water for every 100 g of pasta, and make it as salty as the Atlantic.
Stir in 1 tablespoon of plain flour with the shallots in the pan to incorporate it.
Add 300 ml of beef stock to the pan to deglaze, cleaning the bottom of the pan and letting it simmer to thicken slightly.
Add 1 tablespoon of mustard, 3 tablespoons of crème fraîche, and 1 tablespoon of tomato purée to the pan, stirring gently to combine.
Return the beef and mushrooms to the pan, letting it simmer for a couple of minutes to warm through and combine flavors.
Drain the cooked pasta and finish with a bit of parsley before serving.
