Proof the yeast by mixing warm milk, 1 tablespoon of sugar, and dry yeast in a clean bowl, then stir and let sit for 15 to 20 minutes until raised.
Add about 7 tablespoons of flour to the yeast mixture and stir until the consistency is like pancake batter.
In a stand mixer, combine the yeast mixture, salt, sugar, 1 whole egg, 1 egg white, vanilla extract, and melted butter, then mix until incorporated.
Gradually add half of the remaining flour, then switch to a hook attachment and knead, adding the rest of the flour gradually until the dough is soft and slightly sticky.
Coat hands in vegetable oil, collect the dough, and place it in a bowl coated with vegetable oil, cover with plastic wrap, and let rise for about an hour until doubled in size.
Prepare the filling by mixing cornstarch with sugar, then pit the fresh cherries using a straw or chopstick.
Deflate the risen dough and divide it into 18 to 20 pieces, rolling each into a ball and covering with plastic wrap.
Roll each ball of dough flat on a floured surface, sprinkle with about a teaspoon of the sugar and cornstarch mixture, and place a few cherries in the center.
Fold the dough over the filling and pinch the edges to seal, forming each bun into an oval shape and placing seam side down on a parchment-lined baking sheet.
Cover the buns with a towel and let them rest for another 20 minutes while preheating the oven to 350°F.
Brush the buns with a mixture of egg yolk and 1 tablespoon of milk for shine before baking.
Bake the buns at 350°F for 18 to 20 minutes until golden brown, then cover with a towel to cool completely.
