1

In a small bowl or cup, put yeast and sugar, add warm water, mix, and let proof for a few minutes.

2

In the bowl of a stand mixer, put flour, salt, olive oil, egg, and the yeast mixture, mix, and gradually add warm water until a very soft and slightly sticky dough forms.

3

Oil your hands with olive oil and gather the dough into a bowl, coating it slightly with olive oil, cover with plastic wrap, and let it rise until doubled in volume.

4

Dump the dough on a slightly floured working board, deflate it, and use a rolling pin to flatten it to about 1/8 inch thickness.

5

Use a round cookie cutter to cut out the dough and slightly stretch it to form an oval shape.

6

Place the cut-out pieces on a kitchen towel and cover them with another kitchen towel to rise for about 20 minutes.

7

Fry the pieces on medium heat until golden brown, then let them drain from the oil.

8

Cut each fricassee lengthwise on one side to make a sandwich.

9

Mash the cooked potatoes (optional) and mix with salt and olive oil, then set aside.

10

Assemble the fricassee by adding hot sauce, mashed potato, boiled eggs, green onions, tuna, capers, and black olives.
