3 cups bread flour (360g)

3 tbsp. butter pieces (40g)

Mix ¾ cup milk and 1 ½ tsp. fresh yeast or 1 tsp. dry yeast in a bowl.

Add 1 egg to the mixture.

Incorporate 3 cups bread flour and ½ tsp. salt into the bowl.

Mix until the dough becomes smooth, about 10 minutes.

Add 4 tbsp. sugar and zest from half a lemon, then mix to combine.

Add 3 tbsp. butter pieces and let the dough absorb all the ingredients.

Increase speed and mix for another 10 minutes until smooth.

Stretch the dough to check if it’s elastic and thin enough to see light through.

Gather dough into a ball and leave to rise until doubled in size, usually about 2 hours.

Grease the work surface and start flattening the dough into a big rectangle.

Spread ½ cup jam evenly over the dough.

Roll the dough tightly and fold the edge over to close it.

Cut the rolled dough from the center and braid the two sides together.

Repeat the braiding with the second half of the dough.

Move the braided dough to a ring cake pan or any round pan.

Cover and let rise for 1 hour.

Preheat the oven to 340°F (170°C).
